During the Summer Months, these delicacies molt their shells and the entire crab becomes edible. The crab is lightly dredged in Panko (Japanese bread crumbs), sauteed in olive oil, served on a dollop of garlic mashed potatoes and topped with lime-butter, corn salsa and fried wontons.
